细胞融合重组子酵母的研究

摘要 葡萄酒酵母S.C.5与克勒克柠檬形酵母Klo10作为亲株进行属间融合,交换重组获得重组子46510。生长繁殖快,能在22h内达3亿个/mL以上,很快进入厌氧后发酵,抑制许多需氧菌生长;在25~32℃发酵15d,絮凝快,沉积紧,澄清透明,酒体醇厚圆润,酸甜适口;并可提高酒精度2%;为酿造果酒提供了一个优良菌种。 Recon 46510 was developed through intergeneric interfusion and exchange recombination of Saccharomyces carlsbergensis S.C.5 and its parent strain Kloeckera apiculate Klo 10. The recon grew and propagated rapidly (its quantity achieved 0.3 billion/mL within 22 h), and then marched into anaerobic fermentation stage quickly, which could inhibit the growth of lots of aerobe. In addition, it flocculated rapidly and deposited tightly after 15 d fermentation under 25~32 ℃, which could make wine clear and transparent with mellow and enjoyable taste and increase wine alcoholicity by 2 %.
