摘要
甜椒果实经变温处理后,在低温胁迫(0~1℃)下,呼吸异常升高,乙烯释放增加,果肉细胞膜透性增大,冷害症状显现之前异常代谢变化就已发生。变温处理可降低低温胁迫引起的呼吸增加,乙烯释放和乙醇、乙醛、丙酮的积累,增强过氧化物酶和过氧化氢酶的活性,降低苯丙氨酸解氨酶的活性,减缓果肉电解质的渗漏。在没有造成细胞不可逆冷害损伤之前,适当增加变温次数,有利于减轻冷害造成的不良影响。低温胁迫过程中的变温处理,有明显推迟冷害症状发生和减轻冷害程度的作用。
Physiological responses of change-temperature treated sweet peppers tochilling stress were studied. The results showed that the respiratory rate and the ethyleneproduction of sweet peppers sharply increased under the chilling stress condition (0~1℃ ). The relative conductivity of pulp and membrane permeability increased as the timeof chilling stress prolongs. These abnormal metabolic changes had happened before thesymptom of chilling injury appeared. It is found that the change-temperature treatmentcould lower the respiration rising and the amount of ethylene released, reduce the accumulation of alcohol, acetaldehyde and acetone, enhance the peroxidase activity and catalaseactivity and reduce the phenylalanine ammonia lyase acitivity and the electrolyte leakage ofpulp. The chilling injury of membrane was repaired by change temperature treatement.Before reversible stage of chilling injury of cell, the number of times of change-temperaturetreatment is properly added, it is advantageous lightening the bad effects of chilling injury.During low-temperature storage, change-temperature treatment can distinctly postponethe symptom of chilling injury appearing and lighten the degree of chilling injury.
