摘要 辣椒是广大消费者喜爱的调味蔬菜,食用非常普遍,有良好的开胃作用,但鲜辣椒是季节产品,不易保存,容易腐烂变质而不能食用。介绍了12种辣椒系列产品,达到季节收购,常年贮存的目的。此12种辣椒系列产品分别为:红辣椒酱、腌青辣椒、腌红辣椒、豆瓣辣酱、辣椒芝麻酱、酸辣椒、五香辣椒、辣椒糊、泡甜椒、酱红辣椒和辣椒粉。其加工方法大致可分为2类,一类为鲜辣椒干燥、脱水,达到使微生物无法繁殖的目的;另一类是通过添加各种调味料来达到杀菌、防腐和调味的目的。 Because of its good taste, chilly is a popular seasoning vegetable. But the fresh chilly is the seasonal vegetable, it can get decay very easily. Therefore, it's hard to store it. While the preserved chilly can keep good during the whole year. This article discusses twelve kinds of chilly series products, they are: red chilly sauce, salted green chilly, salted red chilly, chilly sauce with soy bean, chilly sauce with sesame, sour chilly sauce, spiced chilly, chilly paste, pickled sweet chilly, soy preserved red chilly, chilly powder. Two processing methods can be used: First, fresh chilly is dried and then dehydrated so that the microorganism cannot be reproduced. Second, various kinds of condiments are added to prevent the chilly from decaying.
