摘要
采用双乙酰和苯磺隆抗性处理结合双乙酰驯养方法,选育低双乙酰啤酒酵母。结果表明:获得的目标菌株YZB、YZD经小型放大试验双乙酰峰值为0.36mg·L-1,比对照的原菌株下降42%-44%,发酵14d后双乙酰含量为0.07-0.08mg·L-1,真正发酵度为65.8%-66.1%,其他发酵性能基本保持不变,连续转接7代后遗传性状稳定。
Low diacetyl Saccharomyces cerevisiae YZB, YZD were obtained by fasten of diacetyl and tribenuron-metyl. The results indicated that highest content diacetyl was 42%-44% lower than that of original strain. After 14 days, it decreased to 0. 07 - 0. 08 mg·L-1. Real fermentation degrees were 65. 8%-66. 1%. Other parameters were unchanged. Obtained strains were stable after 7 inoculation generations.
