摘要
随着分析方法的不断发展,越来越多的含氮化合物在食品中被检测出来,由于它们特征性强,日益受到人们的重视。本文给出了美国食品香料与萃取物制造者协会(FEMA)对外公布的一般认为安全(GRAS)的含氮香料165种,对它们进行了分类,并对其合成、香气特征和应用进行了介绍。
With the development of analytical approach, more an d more nitrogen-containing compounds are found in food. They cause much attenti on because of their strong characters. In the paper, 165 nitrogen-containing fl avoring substances are listed, which come from FEMA GRAS flavoring substances. T hey are classified, and their synthesis, odor characteristics and application ar e introduced.
