摘要 本文阐述了食品物料电导率的定义及其电导率对通电加热的影响;分析讨论了影响食品物料电导率的因素,展望了食品物料电导率的研究方向。 The concept of electrical conductivity of food and the effects of electrical conductivity of food on ohmic heating were expounded in this paper. The effects on electrical conductivity of food were analysised and explored .The propects of its exploitation were presented.
