摘要
综述了烟草蛋白质的营养价值、提取方法、功能特性(包括烟叶硒蛋白和生物活性肽),以及以烟叶蛋白为原料生产普通的蛋白食品、功能性食品、香精香料、转基因蛋白、医药学研究辅助材料和植物保护剂等,并展望了烟草蛋白的开发利用前景。
The nutritional value, extraction and functional characteristics (including selenium protein and bio-active peptides) of tobacco protein and the protein food, functional food, essence and flavor, transgenic protein, medical research ancillary material and plant protectant made from tobacco protein were reviewed. The prospects of tobacco protein development and utilization were discussed also.
