摘要
本文根据面筋质双指标在小麦中的分布规律,通过数据测定,反映面筋质双指标在专用粉生产工艺中的合理分布,为专用粉生产提供理论依据。
According to the distribution of dual-index of gluten in wheat and the data mea-sured,a reasonable gluten distribution in the process technology of special grade flours was found out,thus providing a theoretical basis for the extract of special grade flours.
