啤酒发酵时杂菌污染与检验方法的研究 被引量:1

摘要 啤酒发酵完全属于纯种发酵,所以发酵时卫生条件要求非常严格。如果操作时不注意卫生问题,导致发酵被杂菌污染,这将会给生产企业带来严重的经济损失。为了及时发现是否污染杂菌,生产企业需定期做杂菌污染检验,以便将损失减少到最低程度。
