论述了耐热性酶在食品工业中所具有的优势,介绍了几种耐热性酶在食品工业中的应用及研究状况,并对其应用前景进行展望。
In this article, the applications of thermostable enzyme's superiority in food industry were proposed. It summarized the research progress of the thermostable enzyme in food industry. And the prospects of the thermostable enzyme's application in food were introduced.
