摘要
研究了以绿茶和低度浓香型白酒为原料的保健茶酒饮料的配制。并对影响茶叶有效成分浸出的各种因素进行研究,通过实验得出了浓香型茶酒制作的最佳条件。配制出的茶酒具有茶和酒的香气特征,口感柔和,色泽淡黄,晶莹透亮,品质好。
The preparation of a health tea liquor from green tea and lowalcohol liquor with thick aroma is studied, and the factors affecting the extraction of active components from green tea investigated. The optimum conditions are determined through experiments. The tea liquor is characterized by the aroma of tea and liquor, gentle mouthfeel, light yellow colour, clear appearance and fine quality.
