打发鲜奶油中乳化剂的合理应用

摘要 打发鲜奶油产品最初是作为动物性奶油的代用品,使用植物油脂代替乳脂肪.最近,在植物油脂中适当混合动物性奶油的打发鲜奶油产品正在成为新宠. DK ESTER is a trade name for sucrose fatty acid ester developed by Daiichi Kogyo Seiyaku Co., Ltd (DKS). DK Ester is a nonionic surface derived from pure sugar and vegetable oils. It has the many functions and properties like non-toxic, tasteless, excellent emulsifying that make it suitable for use in a broad range of application in foods, Pharmaceuticals and cosmetics. This article introduces the rational application of acid ester in cream.
