摘要
为了防止芝麻油的氧化及沉淀,扩大芝麻油的用途,用乳化包埋的方法对芝麻油进行了微胶囊化研究,确定了产品的最佳生产工艺条件。试验结果表明:采用喷雾干燥法,以麦芽糊精、大豆分离蛋白、黄原胶为壁材,可制得高包埋率的芝麻油微胶囊产品;喷雾干燥法制备芝麻油微胶囊产品适宜的工艺参数为:进料温度55℃,进风温度170℃,出风温度75℃。
The microencapsulation of sesame oil was studied by using emulsification method to avoiding oxidation and precipitation and broadening the use of sesame oil.Maltodextrin,soy protein isolate(SPI) and xanthan cum were selected as wall-material,and emulsion were dried by spray-drying technology.The optimum technological parameters of microencapsulation of sesame oil by spray-drying were as follows:feed temperature was 55℃,inlet temperature was 170℃,and outlet temperature was 75℃.The microencapsulated sesame oil with good quality and high retention ratio could be produced.
