天津市156所学校集体用餐卫生状况调查

Investigation of sanitation condition in 156 schools catering in Tianjin

摘要 目的为掌握和了解天津市学校集体用餐的卫生状况,找出学生集体用餐中存在的问题及其对策。方法采用问卷调查和现场检查的方法,对天津市156所学校集体用餐情况进行了调查。结果学校食堂食品卫生持证率为59.57%,学校卫生设施普遍不足,学校食品从业人员及卫生管理人员食品卫生知识缺乏,存在导致食物中毒的隐患。结论提示应加强卫生监督执法力度,进一步做好食品卫生知识培训工作。 Objective To assess the food safety of schoolchildren in Tianjin, finding out the hygienic problems existing in school catering and its countermeasure. Methods Data were collected through questionnaires and food hygigen inspecter field-notes. There were a total of 156 schools were investigated. Results Only 59.57% schools eatery had food hygiene licences. Most of the schools lack sanitation establishments. Food process personnels and food service managers had poor food hygiene knowledge. There exists hidden trouble of food poisoning. Conculusion School food hygiene need to be well inspected in order to assure the food safety of schoolchildren, food process personnels and food service managers require a high quality food hygiene knowledge training.
