摘要 以冷冻丙酮制备了无锡产景红桃、白花桃多酚氧化酶丙酮粉,用分光光度法研究了pH、温度、不同底物、抑制剂对酶活性的影响。 Physico-chemical properties, stability, substrate and inhibitor specificity of a crude polyphenoloxidase (PPO) extracted from two peach cultivars (Jinghong and Baihua) were investigated.
