摘要
随着稻米的市场定位和人民生活水平的提高,稻米贸易对其品质的要求也越来越严格。由于不同的用途对稻米品质有不同的评价标准,目前尚未统一。为此,试从稻米的干燥贮藏品质、稻米的理化指标、碾米的加工品质、烹调与食味品质和外观品质5个方面对稻米品质进行评价。
With the market orientation of rice and improvement of people living standards,the requisition for rice quality is stricter and stricter in rice trade. Because using different evaluation standard for different uses ,there is not a unified criteria to rice quality at present. In the paper,drying and storing quality and physico-chemical indexes,processing quality of rice ,cooking quality ,and food flavor quality and appearance quality are appraised to rice quality .
