摘要
酵母是啤酒生产必不可少的微生物。酵母生长繁殖的好坏,酵母性能的优劣,直接影响啤酒的质量和风味。本文综述了啤酒生产过程中影响啤酒酵母发酵的主要因素及其控制。
Yeast is the absolutely necessary microorganism of beer production. No matter how the yeast breeds and performance ,it will directly effect quality and flavor of beer. This paper summarizes the main factors and control of yeast fermenting during beer producing.
