摘要 目的对中山市食品卫生状况进行调查,探讨食品污染的危害因素,为进一步提高食品卫生和食品安全提供依据。方法描述流行病学、现场流行病学、卫生检验分析。结果中山市的食品合格率从2000年到2003年均在87%以上;不同种类食品合格率均存在显著性差异,肉及肉制品合格率最低。生产加工业与销售服务业的合格率存在显著性差异。食品危害因素中,微生物、重金属、农药及杀虫剂使用残留、各种生产工艺造成的食品不合格存在显著性差异。结论中山市存在多种食品危害因素,应加强监管,以确保提供更安全的食品。 Objective To investigate the status of food hygiene and the f actors of food contamination in Zhongshan city, and to provide basis for improvi ng food hygiene and food safety. Methods Food hygiene and epidemiological inves tigations were conducted. Results The passing rate of food quality control in Z hongshan city from 2000~2003 was above 87% in each year. The passing rate in di fferent categories of food varied, and was the lowest in meat and meat products. There was significant difference in the passing rate between the food producing industry and food trading industry. There was significant difference in the fac tors of food dangers including microbes, heavy metals, pesticide and insecticide , between different manufacture techniques. Conclusion There were many dangero us factors of food danger in Zhongshang city. We should strengthen the supervisi on in food industry and guarantee the food safety.
