摘要
以浓缩耗汁为主料,配以甜味、咸味、鲜味、香味等风味食品添加剂,研制开发出风味独特、适合烹调各种菜肴的精制蚝油。其配比为:浓缩蚝汁20%、酿造酱油12%、白砂糖8%、食盐6%、变性淀粉4%、香辛料浸提液10%、焦糖色0.5%及味精1.5%,其余部分水补足至100%。
With concentrated oyster extract as principle ingredients, added with sweeteners, salteners, tasteners, scenteners, a new type refined oyster sauce is made. With a special flavor, this refined oyster sauce is suitable for cooking. Its ingredient proportion is: concentrated oyster extract: 20%; fermented soy sauce: 12%; refined sugar 8%; salt: 6%; denatured starch 4%; liquid extract immersed with spice: 10%; caramel color: 0.5%; monosodium glutamate: 1.5%; water: 38%.
