摘要
以“绿宝牌”茶多酚为主要成分,配制纯天然油脂抗氧化剂,应用于高级精炼菜籽油中,并同复合合成抗氧剂、α─生育酚和充氮气比较,用国标法测定油脂的过氧化值和酸值,结果证明使用量相同的条件下(0.03%),茶多酚抗氧化剂远优于复合合成抗氧剂,能延长精炼菜籽油的保质期(POV≤10meq/kg)三倍以上,而充氮和使用α─生育酚无明显效果。
A natural antioxidant mainly comprised of Lu Bao Brand Green Tea Polyphe-nols(GTP)was used in high grade refined rapeseed oil,and was compared with Mixed Chemi-cally Synthesised Antioxidant(MCA),α─Tocopherol,and nitrogen(N_2).The peroxide value(POV)and acidity value(AV)were estimated by China National Standard Method and it wasconfirmed that GTP prolong the assurance period of the oil(POV reaches to 10 meq/kg )3.5-fold ,superior to MCA,α─Tocopherol and nitrogen had hardly effect.
