摘要
研究了干酪乳杆菌的高浓度培养条件,并在此基础上探讨了冷冻干燥法及喷雾干燥法制备干酪乳杆菌干剂的可行性。实验表明,初始培养基不调酸,发酵过程中不补料并用饱和Ca(OH)2作为中和剂,调节培养基pH在6.3~6.6,菌数可达1010/mL;将获得的高浓度干酪乳杆菌培养液离心浓缩,以1000脱脂乳加2.700甘油作为保护剂制成菌悬液进行冷冻干燥,其菌数可达到9.0×1010/g。
The conditions of high concentration cultivation and the drying methods of Lactobacillus casei were studied as starter powder in this paper. Acidity of the culture medium was not adjusted initially, the pH was kept at the range of 6.3 to 6.6 by adding the neutralizer of saturated Ca(OH)2, and the population of Lactobacillus casei approached 10~10/mL without fed batch cultivation. The concentration of Lactobacillus casei was suspended in the liquid of 100_0 NFMS and 2.70_0 glycerin before freeze-drying and the population of Lactobacillus casei reached 9.0×10~10/g.
