摘要
研究冬瓜皮色素的提取工艺,测定色素在可见光区的最大吸收波长为418nm。在最大吸收波长下对所提取的色素进行耐光性、耐热性、耐酸碱性、耐氧化剂、耐还原剂、耐常用食品添加剂及金属离子性质研究,对提取的色素进行急性毒性试验,该色素为无毒色素。目的在于为冬瓜皮的利用提供一条新的途径。
Extraction technology of pigment in white gourd peel was studied, the maximum absorbent wavelength of the pigment was 418nm. The test studied many characters of the pigment, such as the ability to endure light, heat, acid and alkali, oxidant, reducer, food additives and metal ion, under the maximum absorbent wavelength. The extracted pigment was innocuous through urgent toxicity test. The purposes of the study are to promote a new approach of utilizing white gourd peel.
