摘要 综述了反胶束萃取技术在食品中的研究进展,包括分离蛋白质和氨基酸,反胶束体系还可以作为酶催化反应介质,具有良好的食品工业应用前景。 The progress of reversed micellar extraction in food science was reviewed,including the separation of proteins and amino acids.Reversed micellar system could also be reaction media for enzymes and has a good application in food industry.
