摘要
腐乳是我国传统的发酵豆制品,以其独特的风味、丰富的营养等特点受到很多国家的推崇。文中简要介绍了腐乳的研究概况及发展前景,并分析了其存在的问题。
Fermented soybean curd, a highly flavoured and nutrition food,is a traditional Chinese fermented food and are widely consumed by the world. In this paper, the summary of the development of fermented soybean curd was introduced, the problems in the processing of fermented soybean curd were discussed and prospects of fermented soybean curd development were proposed.
