摘要
研究了鸡腿蘑在0、5、10、15、20℃5种温度条件和RH为50%~60%、90%~95%2种湿度条件下的贮藏试验.结果表明,低温可明显抑制鸡腿蘑的呼吸强度、失重率、和褐变率;高湿可显著减少鸡腿蘑采后的失重率,但会使褐变率增加.鸡腿蘑采后的贮藏温度推荐为0~5℃,RH为90%~95%,在此条件下的贮藏期限为2周.
Coprinus comatus controlled at 0?5?10?15?20℃ with low and high RH(50%~60% and 90%~95%)respectively. The results show that respiratory rate?weight loss and browning index decreased at lower temperature. Weight loss was decreased significantly at high RH, but brown rate was increased. The proposed temperature and relative humidity of storage of coprinus comatus is about 0~5℃, RH 90%~95% and can be stored about two weeks under this condition.
