摘要
与传统的大豆分离蛋白生产工艺相比,豆粕经乙醇溶液处理后在大豆分离蛋白制备过程中产生的乳清,其蛋白质和低聚糖的含量明显降低。与对照样品相比,优化工艺样品的乳清中蛋白质和低聚糖的含量分别减少了78%和90%。该工艺产生的乳清若加以适当的处理(如超滤),不仅可以回收大豆蛋白,提高大豆蛋白的利用率,而且可减轻乳清排放所引起的环境污染。
The proteins and oligosaccharides contents of soy whey, which originated from the preparation of soy protein isolates prepared with aqueous alcohol washed soy meals, were much lower than that by traditional production technology.Optimized sample showed a reduction of approximate 78% and 90% respectively than the untreated with respect to the contents of soy proteins and oligosaccharides.When such soy whey was treated with ultrafiltration, not only soy proteins lost in whey were recovered and the utilization rate of soy proteins was improved,but also the pressure on the environment pollution would be relieved to some extent.
