摘要
泸州老窖大曲酒是中国浓香型白酒的典型代表,它以“醇香浓郁,饮后尤香,清洌甘爽,回味悠长”的独特风格驰名中外。我院与老窖酒厂近半个世纪的真诚合作,从总结查定到深入科研,在继承民族传统工艺操作的基础上,不断总结,发展和创新,为浓香型洒在全国的普及和发展作出了卓越贡献。笔者以亲身经历,对院厂合作的成果作了较全面的回忆阐述,使读者对浓香型酒技术的进步有较系统的了解。
Luzhou Laojiao Daqu Liquor, as the representative of Luzhou-flavor liquors in China, is famous worldwide for its special styles of mellow and dense aroma, enjoyable aftertaste and pure taste. Sichuan academy of food and fermentation industries and Luzhou Laojiao Liquor factory have cooperated for about 50 years, and generalize continually, develop and innovate based on the traditional technology, so many contributions were made for Luzhou-flavor liquors' spread and development in China. The authors recollected and expounded comprehensively the results of institute and factory cooperation, so that readers could understand systematically the technique development of Luzhou-flavor liquors.
