摘要
本文综述了近年来对具有保健功能的紫背菜生物学特性和综合开发利用方面的研究现状。紫背菜含有丰富的黄酮类化合物、维生素A原和钾、铁、锰、锌等对人体有益的矿物元素,是集营养、保健和治疗疾病等功效于一体优质野生蔬菜。提取的色素物质为紫红色色素,可用于酸性食品中;现已开发出紫背菜饮料,干制品及净菜保鲜加工品等产品,其开发利用前景广阔。
This article introduced the Biological Characteristic and present conditions of comprehensive utility of gynura bicolor DC.This wild vegetable contained lots of flavoroids,vitamin A material,K、Fe、Mn、Zn and so on,so it had nutrition,health and medicine function.The pigment extracted from gynura bicobor DC could be applied to acid food,and gynura bicolor bererage,dry produce and clean and protected produce were developed,the prospect was wide.
