摘要 关于黑米色素开发研究已引起研究者的关注,但有关萃取精制工艺的报道很少。本文介绍了有关的工作。采用酸化水基萃取剂提取黑米中的花色苷,并用大孔吸附树脂进行精制。研究结果表明,影响黑米色素提取率的主要因素是温度和pH值。通过正交实验确定最佳提取条件为:温度,40~50℃;pH,3.0;时间,90min。大孔树脂精制可使黑米色素的花色苷含量达到23.7%,色价E1%1cm(535nm)达到140。 Research on extracting pigment from black rice has attracted interest, but its technology process is scarcely reported. This paper presents our work in this respect. Anacidic water-based solvent is used to extract anthocyanin from black rice, and macro-porous adsorbing resin to refine the pigment. Investigation reveals that temperature and pH are the primary influencing factors. Orthogonal experiments determine the following optimum conditions: temperature, 40-50?℃; pH,3.0; time, 90?min. Refining by the macro-porous adsorbing resin, we achieve 23.7% of anthocyanin in content and 140 in pigment purity (E^(1%)_(1cm)((535?nm)).)
