摘要
本文采用DPPH·自由基法测定苹果果皮提取物的抗氧化能力,该方法简便易操作,反应液稳定,数据重现性好。通过试验证明苹果提取物具有较强的清除DPPH·自由基的能力。果皮水溶性提取液清除自由基的能力比脂溶性提取液清除能力强,表明果皮中含有多种极性不同的抗氧化剂。果皮阳面提取物的清除能力强于阴面提取物清除DPPH·自由基的能力。
The antioxidant capacity of apple skin was determined by using the 2,2-diphenyl -1-picrylhydrazyl (DPPH·) radical scavenging method which is simple,quick and stable. It has been approved that apple extracts has stronger scavenging abilities of DPPH·. Antioxidant activity of the water-soluble extracts was stronger than that of lipid soluble. This confirmed that there were many different kinds of antioxidants with different polarity in apple. The radical scavenging ability of shine-exposed side of apple is stronger than that of shade side.
