摘要
谷物蛋白质中的赖氨酸含量是判断谷物产品质量的重要指标之一。笔者评价了谷物赖氨酸测定的主要方法, 分析了不同测定方法的技术特点和适用性。
Lysine content in protein is one of the most important quality target in cereal. This paper reviews methods used in the determination of cereal lysine. The advantage and suitability among the methods were reviewed.
