麦芽DMSP顶空气相色谱分析方法的研究与优化

摘要 对麦芽中SMM和DMSO含量的测定方法进行研究,采用高温碱性条件将SMM转化成DMS ,并使用偏重亚硫酸钠作为还原剂将DMSO还原成DMS ,然后通过顶空气相色谱对DMS进行分析,从而实现对DMS的两种前体物质的检测。 The method for determination of SMM and DMSO in malt was studied. These two precursors of DMS are determined by converting SMM into DMS in high temperature and alkaline condition and by converting DMSO into DMS using Sodium Pyrosulfite as reducing agent.
