摘要
用湿迁移规律研究水果冷藏过程中的干耗问题,说明冷藏中库温保持恒定下水果的干耗与库内空气的温度、湿度以及水果的散湿因子有关。为实际中采用的各种减少干耗的有效措施提供理论根据,也为提出新的措施提供技术指导。
This paper discusses the procesa of mass lase for fruit in a cold storage with theo-ry of mass transfer and shows that fruit mass loss under constant storage temperature is relative tothe temperature,humidity and moisture diffusive factor,which can give theoretical base for some ac-tual methods for measuring technique decreasing mass loss.
