摘要
淮安饮食文化源远流长。淮安菜发轫于先秦,成形于隋唐,明清成为重要流派;明清时淮安饮食的空前发达,首先得利于运河这条生命线,在此基础上的政治、文化、经济的高度发达也是明清淮安饮食发展的社会背景及重要的内驱力。
Huaian food culture goes back to ancient times. Huaian cuisine originated from early Qin Period, took shape in the Sui and Tang Dynasties and grew into significant cooking style in the Ming and Qing Dynasties. Huaian cuisine gained unprecedented development in the Ming and Qing Dynasties, firstly benefiting from the geographical location by the Great Canal-the life line of China, based on which, the highly developed politics, culture and economy were also the social background and inner motive force for the development of Huaian cuisine in the Ming and Qing Dynasties.
