桅子黄色素的稳定性研究

STUDY ON THE STABILITY OF THE XANTHOPHYLL oF GARDENIA JASMINOIDES

本文报道热处理温度、酸碱度和几种金属高于对桅子黄色素的稳定性的影响．研究表明：高温热处理会使桅子黄色素的色调变浅；在弱酸性、中性和碱性的条件下，桅子黄色素的色调均较稳定，但强酸性会使其褪色．铁离子和锡离子可使桅子黄色素的色调变浅，而铜离子和铝离子对其色调基本无影响。

In this paper,the effects of processing temperature,acidify and alkalinity,and fourmetal cations on the stability of the xanthophyll of Gardenia jasminoides are reported. The resultsshows that high temperature processing would destroy the colour of the xanthophyll of gardenia jasminoides.In general acidity and alkalinity,the pigment is stable ,but in high acidity,it fades.After reacting with the cation iron and tin,the colour fades,but the cation copper and aluminiumhave little effect on the colour of this pigment.
