烯效唑促进寒富苹果果实着色的最佳喷施浓度和机理研究 被引量:8

摘要 分别在苹果采收前一个月和两个月时用不同浓度的烯效唑(S3307)喷施寒富苹果果实,研究S3307对苹果果皮花色素形成和果实品质的影响。目的是找到有效促进苹果果皮着色并提高果品品质的最佳S3307浓度,并揭示其作用机理。结果表明:50mg·L-1S3307喷果后,苹果着色效果明显,可溶性糖含量增加,有机酸含量减少,抗坏血酸(ASA)含量和蛋白质含量升高。这说明50mg·L-1的S3307有良好的着色作用并能改善苹果的品质,因此这种试剂在生产上可能有一定的应用价值。另外研究发现,花色素含量与可溶性糖含量和糖酸比显著正相关,花色素含量与有机酸含量和叶绿素含量显著负相关。 The effects of S3307 on formation of anthocyanion and qualities of apple fruit were studied with different concentrations of S3307 sprayed on the fruit of 'Han fu'apple at the stage of one and two months before harvet respectively. The purpose of this reasearch is to find the optimum concentration of S3307 that could improve coloring of apple skin effciently and enhance fruit quaility and the mechanism of improving coloring was also studied in this article. The results showed that 50ug·ml-1 S3307 could improve coloring of apple peel effciently, increase souble sugar, contentfall organic acid, Vc and protein, but organic acid decreased. This showed that 50mg·L-1 S3307 could improve coloring of apple peel and enchane fruit quality, so this reagent had a good application potential on production. In addition, they had distinct positive correlation between content of anthocyanion and content of soluble sugar, and between content of anthocyanion and ratio of organic acid to souble sugar. They had distinct negative correlation between anthocyanion and organic acid, and between anthocyanion and chlorophyll in peel.
