普通玉米杂交种淀粉的糊化和热力学性质的比较 被引量:6

A Study on Pasting and Thermal Properties of Starches From Normal Corn Hybrids

摘要 采用实验室制取玉米淀粉的方法提取了17种普通玉米杂交种淀粉,并采用快速粘度测定仪(RVA)和差示扫描量热仪(DSC)分别分析了玉米杂交种淀粉的糊化和热力学性质。结果表明:普通玉米杂交种间RVA各参数均存在极显著差异;RVA某些参数之间、DSC某些参数间及RVA与DSC某些参数间存在显著相关性。 A method was used to isolate starches from 17 normal corn hybrids in latoratory. DSC and RVA were adopted to analyze starch pasting and thermal properties respectively. Analysis of variance showed that significant differences existed among hybrids in RVA parameters. Analysis of correlation revealed remarkable correlations among some parameters in both RVA and DSC.
