利用积压的黑加仑浓缩果汁生产黑加仑果酱、果冻。本文对原料、配方、成本和工艺条件进行了研究,确立了较好的生产配方。
Using overstocked blackcurrant juice concentrate to produce low sugar jam and jelly products. In this paper, a study was made on the chemical ingredients and microbial index of the overstocked blackcurrantjuice concentrate, the production prescription design and the costs of the jems and jellys made from the juice.Based on laboratory experiments, the author set up a satisfactory production prescription and a reasonable processing technology of each.
