摘要
介绍了女士营养酸奶的生产工艺,并针对现代女性中普遍存在的缺铁性贫血和肥胖问题,以及结合女性的生理特点和营养需要,用木糖醇代替蔗糖,并添加有益女性身体健康的低聚果糖、水溶性膳食纤维、维生素E、微量元素铁等。依据中国营养学会每日推荐膳食量、通过正交试验,通过感官评分的方法,得出女士营养酸奶的最佳配方为:菊粉1%,低聚果糖4%,维生素E0.05%,铁粉0.05%,脱脂奶粉3%,木糖醇5%,酸奶稳定剂0.15%(均为质量分数)。
This paper introduces the processing technology of yogurt for women.We add various nutriments aiming at the physiological and nutritional features of women. We use the fresh skim-milk, milk powder, fructo-oligsaccharides(FOS), iron powder, water soluble meal fibre, vitamin E, etc as main raw material, and replace the cane sugar with xylitol. The optimum conditions, such as compositions of stabilizer and milk powder and xylitol etc, were determined by orthogonal test. Data from experiment identifies the optimized proportion of the water soluble meal fibre 1%, milk powder3%, FOS 4%, stabilizer 0.15%, xylitol 5%, Fe powder of 0.05% and VE of 0.05% according to the recommendation made by the Nutritional Association of China.
