芝山城区餐饮业卫生现状及治理对策

摘要 目的全面、系统地掌握和分析芝山城区餐饮业卫生的整体状况,为逐步实施量化分级管理提供第一手资料,为决策机构酝酿新的管理模式提供科学依据。方法采用现场观察法、询问法、闭卷答题及时收集现场所得资料,逐项归纳、整理、统计、分析。结果芝山城区餐饮业操作间流程布局,功能分区,基本卫生设施设备的配备都存在极多的弊端,卫生许可证、从业人员健康证持证率,食品采购索证率分别为25.32%、36.32%、12.68%,从业人员卫生知识知晓率也很低。且不同规模餐饮业在上述方面差异存在显著性。结论芝山城区餐饮业卫生整体状况令人担忧,严格餐饮业建筑设计审查,卫生许可审查,强化从业人员的卫生知识培训是改变餐饮业落后状况的关键所在。卫生监督部门要针对餐饮业存在的实际问题,抓住薄弱环节,加强餐饮业的技术指导,加大执法力度和监督频次,引导餐饮业主提高自律。 To learn the hygienic status in catering trade of Zhishan district, provide the firsthand data for quantification management and provide scientific basis for working out new managerial models. Observation, inquiries and questionnaires were applied to collect data on site, which was statistically analyzed. Many disadvantages were found in the catering trade of Zhishan District; the possession rates of hygiene license, health certificate and food purchase license among the catering workers were 25.32%? 36.32% and 12.68% respectively. The catering workers had poor knowledge in hygiene and health. [Conclusion] The overall hygienic status in the catering trade of Zhishan District is worrisome; hygienic inspection and technological instruction should be strengthened to improve the hygienic status in that area.
