摘要 采用玉米芯为吸附载体,海藻酸钠为包埋剂,对红曲霉细胞进行吸附包埋固定化培养。以不同浓度的硝酸钾、大米粉、不同初始pH值及不同通气量等条件变化对细胞红曲霉菌进行培养发酵。通过正交优化实验确定最佳发酵条件,结果表明:硝酸钾浓度为0.2%,米粉浓度为5%,培养基初始pH为5.5,通气量为75mL/500mL时产色素色价最高。包埋载体海藻酸钠的浓度为5%,固化剂氯化钙浓度为4%时,红曲霉固定化粒子的机械强度较好。 Monascus purpureus was immobilized and cultivated using the maize core as adsorption carrier and Na-alginate as embedding agents. Monascus purpureus was cultivated under the conditions with different concentration of KNO3 and rice powder, and different initial pH values and aerations. The optimal conditions of fermentation were obtained by orthogonal experiment: KNO3 0.2%, rice powder 5%, culture medium pH 5.5, aeration 75 mL/500 mL. The color value of pigment was the best under such conditions. When Na-alginate's concentration is 5% and CaCl2 is 4%, the mechanical strength of immobilized cell was best.
