摘要
采用高效薄层色谱法系统地分析了沱茶中的叶绿素及其降解产物、类胡萝卜素主要组分,并对主要组分进行了光谱扫描,就色素系统的内部比例与外形色泽的关系作了初步探讨。结果表明,(叶绿素b+叶绿酸酯b)/胡萝卜素和(叶绿素b+叶绿酸酯b)/(脱镁叶绿酸酯a+脱镁叶绿素a)能较合理地解释沱茶外形色泽形成的化学实质。
The chlorophylls and their decomposed products & main constinents of carotenoids in Tuo Cha were determined by high performance thin-layer chromatoraphy(HPTLC). In-situ spectro of main constinents was recorded with TLC scanner. Moreover, the relationship between the constinent ratio of pigment system and the color quality was probed. Result showed that the appearance of color formation of Tuo Cha could be chemically described with the constinent ratio of (Chlb+Cdb) /Car and(Chlb+Cdb) / (Poa+Pya).
