籽用南瓜籽的营养与籽油的特性分析?

摘要 对籽用南瓜籽的主要营养成分和籽油的理化特性及脂肪酸组成进行测定,发现籽用南瓜籽中含有60.01%的油,29.05%的粗蛋白。籽油的脂肪酸组成分析表明,籽油主要含不饱和脂肪酸,是不饱和脂肪酸含量较高的植物种籽之一,其中亚油酸的含量高达52.92%,是一种极具开发潜力的营养保健油源。 The content of nutrition,physical-chemical properties and fatty acid composition of Seed Pumpkin seed oil were investigated in this paper.We found that there was 60.01%fat and 29.05%protein in seed.The results indicated that unsaturated fatty acid were the main components of Seed Pumpkin seed oil,and it's one of the oilseed having highest unsaturated fatty acid level, in which linoleate content was about 52.92%.As a healthy oil source,Seed Pumpkin seed oil will have a big developing potential.
