摘要
作为新兴现象,中国连锁餐饮业有着许多值得进行实证研究、理论提升的地方。就成都连锁餐饮业而言,在发展特许加盟的方式上,存在不同的类型,主要体现在总部在财务、人事、经营管理活动介入加盟店的方式与程度不同。同时,在特许加盟服务支撑体系建设方面,存在加盟服务设计与加盟信息提供上的问题。连锁餐饮企业特许加盟扩张速度上也有三种不同的把握方式。因此,连锁餐饮业特许加盟经营活动需要规范化,连锁餐饮企业应树立合理利润观和长远发展观;政府应鼓励为加盟者把关的咨询测评机构的出现;管理部门应加强相关法规、政策的完善工作。
As a new phenomenon, the Chinese chain catering industry has many aspects that are worth empirical studying and theoretical promoting. As far as the Chengdu chain catering industry is concerned, there are different modes of franchise in terms of the modes and extent the headquarters' intervention in the financial affairs, human resources and business operation in the franchise chain restaurants. On the construction of the chain supporting system, there are problems in franchise services and franchise information offering. Besides, there are three ways to control the chain expansion speed. To standardize the franchise activities, the catering chains should hold a view of reasonable profit and a view of long-term development. Meanwhile, the government ought to encourage the appearance of franchise consultancy and evaluation organizations and the relevant administrative departments ought to improve the relevant laws, regulations and policies.
