热激处理金冠苹果果实内部温度动态预测模型的研究 被引量:6

摘要 实验采用自制的多点温度瞬时响应探针动态测定在40℃的热空气中进行热激处理的金冠苹果果实内部的实际温度分布,同时,又从热物理学角度综合分析了金冠苹果在热激处理过程中果实内部的热量传递状况,为此建立了非稳态传热模型,并利用数值方法模拟计算了苹果果实内部各点瞬时的温度分布状况。结果表明,计算值与实验值有着良好的一致性,从而验证了模型的可靠性,并为进一步研究温度对采后果实生理生化特性的影响提供了参考依据。 The multiple temperature measurement probe was used to determine the temperature distributions in Golden Delicious apple fruit during heat shock treatment in hot air at 40℃. The heat transfer process of the apple fruit was analyzed by the thermo-physics theory. The temperature distributions in Golden Delicious apple fruit during heat shock treatment in hot air at 40℃ were obtained by using the numerical methods. The result showed that the calculated results accorded closely with the experimental value. The build-up mathematical model is suitable to predict the temperature distributions in fruits when their environment is changed. It is helpful for researching the life of plant by using the theory of thermophysics.
