摘要
酵母抽提物中含有丰富的营养物质,如氮源、维生素、矿物元素等,针对高浓酿造中酵母营养物质的缺乏,本实验将抽提物作为酵母营养盐添加到高浓麦汁中,添加量主要以麦汁中α-氨基氮(α-N)水平作为衡量指标,以未添加营养盐的空白作对照,分析发酵液指标.
There is plenty of nutrition in yeast extract, such as nitrogen sources, vitamins,minerals etc. And because this, yeast extract is added to high gravity wort as yeast nutriment to solve the nutrition scarcity in high gravity brewing. The amount of yeast extract added was indicated by the quantity of α - N in it. The sample without yeast extract was carried out simultaneously as blank, and the result of fermentation was analyzed.
