摘要 植酸酶是一类能促进植酸及其盐类水解成肌醇和磷酸的酶的总称。它作为饲料和食品添加剂也有重要的使用价值,能提高饲料和食品中磷的利用率、减轻对环境的污染,清除植酸与金属离子的螯合作用,改善营养成分的吸收和利用。本文主要综述了国内外真菌植酸酶的分子生物学及其基因工程研究的最新进展,讨论了其进一步的研究方向与应用前景。 Phytase catalyzes the hydrolysis of phytate to myo-inositol anf inorganic phosphate. It is the most additive in odder and foodstuff. Phytase improves the bioavaibility of phytate phosphorus in plant foods to human and animals, reduces phosphorus pollution of animal waste, eliminate chelation between the phytate and metallic ion, improve the absorption and utilization of nutritious substance. The new evolve of fungi phytase in the molecular biology and gene engineering in our counry and abroad were summarized here, and the research direction and application foreground in the future were discussed in the article.
