摘要
对利用微生物发酵土豆渣的工艺进行了研究.研究结果表明,在分步发酵模式下,利用菌株C13在菌龄2d、接种量25mL、摇床(P270)转速175r/min条件下发酵土豆渣4d,灭活后加入菌株D31,发酵2d,可以获得膳食纤维总含量达到35 28g/L的发酵液,其中可溶性膳食纤维为6 31g/L,为土豆渣深加工提供了新的思路.
<Abstrcat>The fermentation technics of potato dregs preparation was studied. The results showed that with two steps fermentation, the product contained the dietary fiber 35.28 g/L, the soluble dietary fiber 6.31 g/L, the fermentation condition was: seed age 2d; inoculum size 25 mL;rotation velocity 175 r/min; fermented with C13 for 2d, then killed C13 and fermented with D31 for 2d. A new approach of using potato dregs was provided.
