Biosensor and Its Application in the Determination of Contaminations in Food

摘要 食品的安全性越来越受到人们的关注。生物传感器作为一种新的分析工具,在食品污染检测中具有广泛应用价值。文中主要介绍了生物传感器的工作原理、分类及其特点,并对其在食品污染(农药残留、生物毒素、食品添加剂等)检测中的应用进行介绍。 Food safety concern has become more and more significant in recent years. As a new mean of analytical method, biosensor could be widely used in the determination of food contamination. In this paper, biosensor and its applications in the determination of food contamination were reviewed. The principles, type and characteristics of the biosensor were also introduced. Biosensor can be used in determination of pesticide residue, natural toxins and food additives et al in food.
