A review is given had on the stategy ,results,conclu- tion,prospects of genetic modifying,which consists of four parts:protelysis,diacetylproduction,exopolysaccharide,bacterin production.Factors ac- counting for the unsafety of genetic foods were introduced,and so did the method to solve the problem.
